Happy October!








Happy October! We've been getting ready since September haha. Halloween is definitely our favorite holiday over here. We've been reading Halloween books, watching scary movies, walking the Halloween isles at target, searching thrift stores for Halloween treasures and listening to the Misfits nonstop. I will take out the Halloween decor today and pick up a few more things this weekend, nothing too crazy.

We bought Maxi's costume last weekend, he's been wanting to be Captain America ever since he first saw the costume and I really dislike sharing costume pictures before Halloween because I feel like it takes the fun from showing pictures the actual day... but I couldn't help to share this one of my little Captain America. I waited it out, in case he changed his mind but he's stuck with it for a month so I bought it before it disappeared! He's been practically living in the thing and I hope it survives until Halloween haha. He gets so into his role, he once hid me in the room and told me to stay there because he was going to fight the "monsters".

I baked these one bowl famous chocolate cupcakes yesterday to celebrate the first of October and they were AMAZING... the only thing I wasn't really crazy about was the frosting but you can easily use your favorite frosting recipe instead. But you should definitely make these like yesterday. This will definitely be my go to chocolate recipe from now on. 

P.S. If you have a toddler and you happen to be at target pick up the book spooky pookie, Maximiliano absolutely loves it. It's a cute Halloween read, especially for ages 2-4.

Halloween Weekend





Hi! Hope you guys had a great Halloween! Our Halloween Friday was spent reading in bed, watching Halloween learning videos + sing alongs and handing out candy in the evening. Maximiliano was spider man this year and we didn't go all out on his costume because he's 2 and is living up to those famous terrible twos indeed, he pretty much spent a lot of the time we were out there handing candy... in the garden. Digging up dirt and throwing rocks (luckily not at people). He woudl not stay still for a picture and also didn't leave his mask on for more than a minute. Although he did enjoy seeing other spiderman, batman and superheros of all kinds. Especially putting treats in their bags. 

We had plans of taking him trick or treating around the block so he could get a little (more) of his energy out but instead he decided to go to bed. My husband and I then went to a friends Halloween party for a bit and it was great hanging out with adults! Unfortunately I haven't done much of that lately and it is so needed. This year left me thinking that next Halloween we will probably take him out trick or treating first and then hand out candy later. Maximiliano is so active and has so much energy that I think he would really enjoy it much more! Unfortunately I got a cold from being out Friday night, it was a bit cooler than expected. Luckily it's not so bad and some tea and rest should do.

I can't believe Halloween is in two weeks! We haven't even gotten our decorations up yet but this year I want to keep it very minimal. Every year we put them up the first day of October but we are far behind this time around. Today we picked up some spider webs and I'm hoping we can pick up some other decorations (and candy) on Friday that way we can be set to put up the stuff by Sunday.

So far I can take off two things off my fall list. The other day I baked the most delicious triple pumpkin cinnamon rolls! I put pumpkin in the dough, the filling and the frosting and they were seriously the best cinnamon rolls I have EVER had. I would share the recipe if I would have gotten some decent pictures but it was late and the lighting was very bad. Also today we went to the pumpkin patch, Maximiliano is in love with pumpkins and he was so happy and excited to see so many of them. We got him a small pumpkin and he has been playing with it nonstop, rolling his little hot wheels on top of it and what not. We will definitely be going back and I will share pictures once I have a little more time.

What I've Been Pinning

I know everyone is tired of Halloween posts but these three pins are worth sharing I promise.


Definitely a future costume for Maximiliano, E.T. is one of my absolute favorite
childhood movies, that I'm sure he will love as well.

I don't think this even counts as a Halloween pin, or does it? Pumpkins are just a fall staple...
But then again this is like a pumpkin in a costume! Either way I love it and I plan on painting
one of these donut pumpkins later on today.


I plan on making one of these monsters to put up on our wall, I just think they are
so cute and perfect to keep on the wall year round. Mine is definitely wearing those
cool sunglasses.

Now on what I've been cooking and what I want to be cooking and baking.


I made this home-style chicken noodle soup with slight modification, I used
regular elbow pasta and dried basil instead of parsley and it did not disappoint.
Everyone loved it!


I want to be making these chicken pot pies, real soon. It's the perfect fall comfort food
other than soup and since I hate the frozen kind, these are a must.


These poached eggs in tomato sauce on toast sound amazing and warm perfect for
a chilly morning.


This pumpkin crumb cake is a MUST. It sounds so simple and yummy to pass on.

Donuts Forever


So I am a major donut enthusiast, I have to have my donut fix at least once every month or two.
I was browsing Pinterest and came across these lovely donuts, Immediately I said to myself;
"I have to make some!." And so I did. 

These are mini baked donuts, I prefer the fried version of course but these are good nonetheless.
Slightly adapted the recipe to ingredients I had on hand. I subbed the buttermilk for evaporated
milk and used all spice instead of nutmeg. Using the mini pan, this recipe makes 48 tiny little donuts.

Glaze was simply 1/3 cup powdered sugar, splash of vanilla and splash of milk. Topped some
with shredded coconut, others with sprinkles and rolled some in powdered sugar.
