The Best Soft Chocolate Chip Cookies


Hi. It's been a VERY long time since I have shared a recipe with you guys, let alone a cookie recipe. I originally started this blog to share my favorite baking recipes and it slowly but surely turned more into a journal for myself, where I share pictures and ramblings.

I would like to share more recipes here, but I hardly have the space/ time/ patience to photograph my food, maybe in the near future I will start doing more of that. Anyway. These cookies are definitely worth sharing. Who doesn't love a good soft chocolate chip cookie right out of the oven? My foodie/ cook/ culinary savvy sister proclaimed them "the best cookie I have had".

Best Soft Chocolate Chip Cookies

makes 12 perfect cookies

Ingredients:

- 8 tablespoons of unsalted butter
- 1/4 cup white sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon vanilla
- 1 egg
- 2 cups of all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chocolate chip + extra for adding on top

Instructions:

1. Preheat the oven to 350 degrees. Prepare your baking sheet.
2. Microwave the butter for about 30 seconds. Beat butter and sugars until creamy.
3. Add vanilla and egg. Now listen carefully, ONLY beat the egg for 10-15 seconds or you will have stiff         cookies.
4. Add flour, baking soda and salt, stir until it forms a ball that is easy to manage with hands. If too               sticky, slowly add a bit more flour until manageable.
5. Stir in chocolate chips and roll dough into 12 balls, place on baking sheet then proceed to stick 3-4         v     chocolate chips on top of each cookie (this is for looks).
6. Bake for 11 minutes and not one more! They will look pale and fluffy and they will finish cooking after they are out of the oven. Do NOT over bake. I have a tendency to over bake but try really hard and just   take them out of the oven after 11 minutes. Eat one, or two and then let them rest for at least 30 minutes     on sheet. Enjoy with a cold glass of milk.

June was very eventful. Maximiliano's birthday, fathers day, friends birthday, family baby shower, drive in, zoo, etc. For some reason though this summer has just not felt like summer to me... The weather has been so off here in San Diego.

Del Mar Fair


Last month we went to the Del Mar fair and it was amazing! We hadn't been since I was pregnant with Maximiliano so you could say I was pretty excited. Although we didn't get to go on any rides (not that I did last time anyway), Maximiliano got on many and he had a blast! except for maybe the frog ride... He was very excited at first but that excitement quickly turned into fright and he was hanging on tight and making very silly faces that I couldn't help laughing at quietly. Well it couldn't of been that bad because he got off jumping up and down and clapping and more than ready to head on to the next ride! That's my little thrill seeker. We did go into a few fun houses together and those were fun hence the name... I don't think I had been in fun houses before. As always the food was delicious!!! Every time we go to the fair we buy these amazing sweet potato fries, another tradition are the cinnamon rolls that are to die for. Already excited for next year!

One Of Those Days


You know those days were literally everything that could go wrong, goes wrong? Today was one of those. But hey, it could always be worse, right?

Today consisted of a very disobedient toddler, keys getting locked in the car with a shopping cart full of groceries, really bad fast food for lunch!, bumping my head with the corner of the car door and also I almost ate an entire package of chewy chips ahoy! to cope with everything. Ahhh! At least all wasn't so bad, I scored on some harry potter books, I also had a really good time at the park with Maximiliano... which by the way, I just remembered that as soon as we walked to the playground a kid ran right into him, throwing him to the floor and not even stopping to say sorry! So there was also that. Oh and an argument with the husband! What was up with today? At least today wore Maxi out and he passed out before 8, now that is a miracle right there.

Maximiliano turned 3!

Maximiliano turned three years old on the 27th of June! My little baby is not a little baby anymore. I get all kinds of sappy over this. I miss my little chubby cheeks and baby giggles but at the same time I love all the new joys that come with him growing. 



 I took some photos of him so I could send one out with the invites. This one above was the winner! One day we just hopped in the car, made a quick stop at Michael's, grabbed this wooden three and headed to the beach. It was actually a lot of fun and of course the day wasn't bright and summery but I loved the photos nonetheless.





The night before I stayed up getting things ready. I also filled up his pool with balloons and some of his presents for a morning birthday surprise.





This year we hosted his party at a different nearby park. We set up under a bunch of trees and right by the playground which was so convenient. The weather was not the best (just like last year), you would think since he is a summer baby that we would have the perfect sunny weather to host a party at the park right? (For his first birthday party we had the warmest, sunniest, not too hot day.) The trees did an amazing job of keeping us warm and even dry from the teeny tiny sprinkles that fell that day. 

For food we served carnitas tacos, beans, potato wedges, chips, salsa and guacamole. I initially planned on having a few gold fishes for the tables but opted for swedish fish gummies and goldfish crackers instead. I had bubbles for the kids to blow and a few other games and of course goody bags. I made a few decorations but didn't really take pictures of anything, I was clearly too busy. But I did get pictures of some of the kids in the shark backdrop that I made. I love how it turned out and it served as both decoration and photo booth!

The birthday boy was running wildly all over the place with his buddies and refused to stop for pictures, so what you see is what you get (except for the film that I haven't developed yet, we'll see what we'll get from that!) haha. We tried really hard to get a family picture but did not succeed (except for a tiny instax print that is worth gold to me!), all we got were tantrums instead. It was even hard to get him to sit for cake time! He was having too much fun, which makes my heart full because that is why I did all this for. PiƱata time was, as always, a blast for the kids and us adults enjoyed watching them. Maximiliano and his buddies then proceeded to run off with his presents and they all opened them together and oohed and ahhed at his new toys! It was such a nice time with family and friends, building core memories is my favorite. 

That night we got home and changed into warm clothes, Maximiliano took a "nap" that was supposed to be bed time... I guess the excitement was too much. When he woke he opened his last present from us and was the happiest because it was a big box with all of his birthday requests: a backpack, books, ninja turtle cars and the playskool marvel super hero babies he was missing + a couple playskool jurassic park dinosaurs. (He calls these playskool heroes his babies and loves them to death!) From then until bed time it was full on playtime with all his babies. XOXO
