Maximiliano, My Heart

The way you come up to me when I'm doing dishes and hug my leg and say " I lah you ".
The way you pick flowers for me, whether it be the ones in your lego sets,
the ones from your grandma's garden, or the ones on the sidewalk when we go on walks.
The way you climb up on me when I'm sitting on the computer desk and wrap your
arms around me and put your forehead to mine to let me know it's time to get up from the desk.
The way you look up to me and smile so wide your eyes get really small.
The way your happiness is contagious, even when I'm having a rough day
you are there to make everything better.
You are my sun, you are my moon, you are my stars, you are my heart.

Shortbread Supreme + Blended Coffee

I know, I know, these cookies don't look very pretty but I promise I will soon invest in a camera.
If these weren't absolutely delicious I would not even bother with sharing the recipe with you, can you
believe you only need three ingredients? Well, make that four if you want to add in sprinkles like I did.

You know those delicious cookies that come in a tin box? These taste exactly like that. Enough Said,
here's how you make them:

Recipe slightly adapted from allrecipes

Shortbread Supreme:

1 cup butter
1/2 cup sugar
2 cups flour

1. Pre-heat oven to 350 degrees.
2. Beat butter and sugar until light and fluffy.
3. Stir in flour and sprinkles by hand and refrigerate dough for 30 minutes (optional).
4. Roll out dough on slightly floured surface and cut into squares with a knife, if refrigerated you can use cookie cutters.

*You can also add nuts or chocolate chips instead of the sprinkles

It's been TOO hot lately so hot coffee in the morning has been switched out to blended coffee.
It's so simple that you really can't beat this way, why bother with Iced coffee.

Simple Blended Coffee:

4-5 Ice cubes
1 cup of your choice of milk
1/2 tablespoon instant coffee
1/2 tablespoon sugar or condensed milk

Blend all ingredients for about a minute, pour and enjoy!

Strawberry Cheesecake Popsicles

Sorry for the bad picture and chipped nails but! these popsicles were really good and
super easy to make. I doubled the ingredients to make extra and used dixie cups because
I have yet to invest in a good popsicle mold, maybe next summer.

Mix 1/2 cup graham crackers with 2 tablespoons melted butter, set aside.
Blend one 8 oz. cream cheese package, 2 cups strawberries, 1/2 cup confectioners
sugar and 1/2 cup sour cream (you could also use Greek yogurt which I prefer but
sour cream was in the fridge so it was what I used and it worked perfectly.)
Pour in your molds and top with graham cracker mixture. If your are using dixie
cups I suggest adding the graham cracker crumbs first.

enjoy.
