Easter | Part I

Hope you all had a happy Easter weekend! I had to bake a wedding cake for Saturday, with short notice and no working oven! It was a bit crazy, I had to go bake at a friends house and I slept only three hours on Friday night. Saturday afternoon we went on a nice walk, looking for squirrels and admiring all these blooming trees (which smelled amazing). We took advantage of our beautiful walk and snapped some pictures of our little crazy bunny. Everyone stopped to tell us how cute he looked and I couldn't agree more with them. Call me biased if you will. He's the apple of my eye. When we got home, Maxi and I dyed eggs because Damian had a show to play (they usually do the egg dying). I spent the rest of the night preparing food for the picnic we were having on Sunday. I will post our picnic pictures on a separate post because I don't want to overwhelm with so many pictures!

Maximiliano: On Sunday we went to the beach with your cousin Mauri, who came down from San Francisco. As you guys were digging sand to build castles, we came upon a little worm. You promptly picked it up with excitement. You showed it to Mauri and got sad at the fact that he thought it was gross, so you walked away to show your dad. Two minutes later you ran off trying to feed the worm (pictured above on my leg) to the seagulls.

Asian Marinated Baked Chicken


I'm kind of really bummed that I haven't been able to make this chicken since my oven broke down... So I'm sharing the recipe with you because if you have a working oven you should totally be making this a.s.a.p. Easy, fast, delicious. Did I mention easy? Did I mention fast? Oh! Did I mention one dish!? Anddd on top of that you probably have all ingredients on hand.

Disclaimer: when I say fast, I mean fast preparation but this does have to be prepped the night before and baked in an oven for 40-50 minutes.

Asian Marinated Baked Chicken
recipe from: Chowhound

Ingredients:

- 1/2 cup soy sauce
- 1/4 cup packed brown sugar
- 3 tablespoons finely chopped ginger
- 1 tablespoon finely chopped garlic
- 2 teaspoons toasted sesame oil
- 1 teaspoon black pepper
- 3 pounds chicken drumsticks, thighs, or a combination

Directions:

Place all ingredients but chicken in an oven safe dish and whisk (you could use a big Ziploc bag). Coat chicken in sauce, cover and refrigerate over night. In the morning, when you have a chance, turn the chicken over. Before baking, let rest at room temp. for 30 minutes. Turn all the chicken skin side up, bake for 40-50 minutes at 475 degrees, until chicken is dark. Spoon extra sauce on top, sprinkle with green onions and or sesame seeds. Serve with white rice and steamed veggies of your choice.

Whenever I go run an errand or sneak out to get a break, Maxi always receives me with a big hug and an "I lost you mama!"

9/14/15

While I'm changing Maxi's diaper: Maxi: "don't change my diapy!" Me: "well you better start going to the bathroom then, Griff doesn't wear a diaper anymore, he uses the bathroom." Maxi: "I don't libit!" Me: "what!?" Maxi: "I don't libit!" Me: "you don't believe it?" Maxi: "no!" as he laughs.

While watching little rascals there's a scene at the bank where the kids try and take out a loan, Spanky tells the teller "you can't treat people like this, mister!" Mr. Welling tells the kids "You're not people, you're kids." Maxi asks me, "Mama, I not people, mama?". My heart!

Maxi, as we sit and watch the rain: I lub it mama! I lub the sun, I lub the hot, I lub the cold, I lub the rain! I lub it mama! We need a jacket!

While we are playing with his ninja turtles he assigns me to be April and he is Donnie, then he says "April, your hair is beeeautifuuuul!".

Maximiliano: Here you are, petting a rabbit on the playground. Some guy just showed up with three of them and you wouldn't stop petting and admiring them. You said you wanted one too. I think we share a love of rabbits, but really I know you love all animals the same.

February in Pictures








































February. Such a beautiful month, if you think about it. The month of love, the month when the weather starts warming up and the days start getting longer. February was filled with warm sunny days, walks to the coffee shop, first trip to the farmer's market of the year, lots of movies, lots of picnics (my favorite!) and flowers blooming everywhere!
