Earl Grey & Poppy Seed Muffins w/ Broiled Grapefruit

Hello fellow foodies, crafters and bloggers. It is raining here on my little side
of the world and my puppy naps on my lap while I listen to hellogoodbye.
Things are great. Perfect timing to share this recipe with you. This recipe is great.

I found this recipe saturday night and just knew I had to bake these
Sunday morning. Apparently I wasn't the only one who thought this, I just saw
that Meredith from one sheepish girl just blogged about baking these and she
made the cutest little video to go along with it and I also have to mention the
amazing song that went along with the video. The broiled grapefruit technique
I saw on Pinterest and being  a fan of grapefruit, well I had to try them this way,
I'm so glad I did!

I'm not a muffin type of girl, I like them but I'd much rather have a slice of cake
or a frosted cupcake, I love my sugar but sometimes I crave a good old
simple muffin and this one here is perfect earl grey tea and poppy seeds? Amazing.
Paired with a nicely broiled grapefruit? Superb.


Earl Grey & Poopy Seed Muffins
makes:12

Ingredients:

- 4 earl grey tea bags
- 1 c. milk
- 2 1/2 c. self rising flour
- 3/4 c. sugar
- 1 T. poppy seeds
- 9 T. butter, melted
- 2 eggs, lightly whisked
- marmalade or apricot jam, to serve or glaze

1. Preheat oven to 350 degrees. Line 12 muffin cups.
2. Warm milk until nearly boiling in small saucepan,
    add tea bags and set aside to infuse and cool..
3. Place sifted flour, sugar and poppy seeds in large bowl, stir to combine.
4. Add milk mixture, butter and eggs, gently stir to combine.
5. Spoon into prepared mold and bake for about 25 minutes.

If glazing with jam, heat up jam until runny and brush on top of muffins.

* Tip: Do not overbake or they will be dry, check with a toothpick.

Broiled Grapefruit

Ingredients:

- 1 grapefuit
- 4 T. brown sugar
- cinammon to sprinkle on top

Cut grapefruit in half and segment with a knife. Add 2 T. of brown sugar
to each half and sprinkle a pinch of cinnamon on top. Place on baking sheet
and broil on high for 5-7 minutes.
* You might have to cut a little of the bottoms so they stand. Eat warm.
 So simple yet so out of this world!
