Rocky Road
Made these cupcakes for my friends birthday yesterday.
I used my jelly roll recipe and made a rocky road icing to go with it.
Every one loved them, that made me happy.

Cupcakes, Cupcakes & more Cupcakes
Made cupcakes for my friends 20th birthday:
Devil's food + coffee cream cheese icing
Devil's food w/coconut filling + coconut icing with a bit of shredded coconut jelly on top.
Received a lot of compliments, especially for the coffee cream cheese ones.
I absolutely loved the coconut cupcakes.

Cookies & Cream Cheesecakes Recipe
I made these for my boyfriends birthday this passed weekend
and everybody loved them so much, it made me happy.
cookies & cream cheesecakes
recipe from the book: Martha Stewart's Cupcakes
Ingredients:
- 42 cream-filled chocolate sandwich cookies (Oreos are my fav.)
30 left whole, 12 coarsely chopped
- 2 pounds cream cheese, room temp
- 1 cup sugar
- 1 tsp. pure vanilla extract
- 4 large eggs, room temp, lightly beaten
- 1 cup sour cream
- pinch of salt
1. Preheat oven to 275 degrees.
Line muffin tins with paper liners &
place 1 whole cookie in the bottom of each lined cup.
2. On med.- high speed, beat cream cheese until smooth.
Gradually add sugar, and beat until combined.
Beat in vanilla.
3. Drizzle in eggs, a bit at a time, beating to combine.
Beat in sour cream and salt. Stir in chopped cookies by hand.
4. Divide batter evenly among cookie-filled cups,
filling each almost to the top.
Bake, rotating tins halfway through, until filling is set ( about 22 min.)
Cool completely and refrigerate at least 4 hours or up to overnight.
I had plenty of left over mix,
so i bought a box of white cake mix and made this today:

Honey Caramel Corn
I wanted some caramel corn but ran out of corn syrup,
so I looked for a recipe that didn't involve corn syrup
and found this: Honey Caramel Corn.
It was delicious I only got to try it,
my dad ended up eating all of it!
I'm posting the recipe for you guys.
If you love popcorn like i do and want to try something new;
try this.
Honey Caramel Corn
-1/2 cup honey
-1/2 cup butter or margarine
-1/2 cup packed brown sugar
- salt
-1 tsp. grated orange peel
-1/2 tsp. baking soda
-3 quarts (12 cups) popped popcorn
1. Place popcorn in large baking sheet ( I use wax paper, makes for easy cleaning)
and remove all unpopped kernels.
2. Melt butter in saucepan; stir in sugar, honey & salt.
Cook & stir until mixture comes to a boil.
3. Reduce heat to medium; boil without stirring for about 3 min.
4. Remove from heat & stir in orange peel and baking soda.
5. Slowly pour syrup over popcorn while stirring.
6. Bake at 250 degrees for 45 min., stir every 15 minutes.
7. Cool. Break into serving-sized pieces and store in airtight container.
*Six serving of two cups each.

Busy Baking Bee
I've been a busy baking bee,
like the title of my post says.
Cupcakes with fondant flowers
and a Hello Kitty birthday cake for my
little sister who turned 10 and
a whole lot of sugar cookies,
tonight i will be baking some more.
Here are some pictures of what i have been baking
minus the cupcakes ;( no camera.
4 layers of butter cake with a piƱa-colada filling, yum.
*that smudge you see there is not the mouth,
my sister accidentally put her finger in it. i fixed it after.
The Christmas cookies were for a class project.
First time decorating cookies with fondant,
I think i did a pretty good job (:

halloween cookies & cold porcelain
For Halloween i baked these sugar cookies,
they turned out to be the best sugar cookies
I've made so far. I decorated them with royal icing
it was my first time making and decorating with
royal icing so they didn't turn out so bad after all.
This guy was my favorite, he turned out adorable:
And with these figures I'll finish off my post.
This pregnant women is made from cold porcelain mix.
I was practicing making figures
out of cold porcelain to make it easy to work with gum paste
and fondant. It's a cake topper for a baby shower cake (:
or it would be if it were made out of gum paste this is
just a model.
Had some extra cold porcelain so i decided to make
this cute little chubby bunny in a bathing suit
sitting on a carrot n.n
